Seriously Good! Sweet-Salty Nagoya Style Chicken "Spare Ribs"

These chicken "spare ribs" or wings taste like the ones served Fuuraibo, a Nagoya restaurant. They're pan-fried rather than deep fried!


Chicken wings (middle section)
500 g
●Soy sauce
4 tablespoons
2 tablespoons
●Light brown sugar (or white sugar)
2 tablespoons
●Grated garlic
to taste
3 tablespoons
Plain flour
as needed
to taste
White sesame seeds
to taste
Vegetable oil
as needed


1. Put the chicken wings and flour into a plastic bag, and coat the wings evenly with the flour.
2. Put the ● ingredients into a small bowl, and mix together.
3. Heat oil in a pan and pan fry the chicken wings. Start over high heat, and when the chicken has started to brown, turn down the heat to medium-low. Brown patiently.
4. Turn the wings over. When they're browned on all sides, add the combined ● ingredients, and simmer while stirring over high heat. Add plenty of black pepper.
5. Transfer to a serving plate, scatter sesame seeds and they're done.
6. If you prefer crispy wings, use less of the seasonings.
