Tiramisu-style Strawberry Mousse

Strawberries with cream cheese... and mascarpone cheese so the mousse wouldn't turn out too heavy. It turned out smoother and more delicious.

1. Dissolve the gelatin in water and put over a hot water bath.
2. Add hulled strawberries and 20 g of granulated sugar to a bowl and mash the berries. If want to add lemon juice, add 1 - 2 teaspoons.
3. Add cream cheese, mascarpone cheese, and 50 g of granulated sugar to a bowl and mix over a hot water bath until smooth.
4. Add gelatin from Step 1 and the strawberries from Step 2 to the mixture from Step 3 and mix together.
5. Put heavy cream into a bowl and whip until soft peaks form.
6. To the mixture from Step 4, add the whipped heavy cream from Step 5 and mix.
7. Pour into a mold and chill.
8. Here it is after it set... fluffy and jiggly.
9. Here I made these in heart-shaped molds with a bottom layer of sponge cake.
10. I made the top layer of gelatin with mashed and strained strawberries and raspberries, added sugar, water, and gelatin and heated the mixture. After letting it cool, I poured it on top of the mousse.
11. You can make this as a whole cake, too.
12. This is also delicious if you add layers of sponge cake. You can adjust the amount of mousse and thickness of the layers.

Story Behind this Recipe

I thought that cream cheese with the tartness of strawberries might be too rich. Adding mascarpone cheese made this recipe more delicious.
