Put the flavoring ingredients in a heatproof container, and microwave for 2 minutes at 500 W. You don't need to cover with plastic wrap.
Mix well until the sugar is dissolved and it's ready! Mix with freshly cooked rice while fanning it with a handheld fan.

Story Behind this Recipe
I wanted to simplify my recipe for sushi vinegar easily, so I used shiro-dashi that I always have in my kitchen.
For the sugar, use castor sugar or granulated sugar, which melt easily and won't color the sushi vinegar. If you prefer a sweeter flavor, use 1.5 to 2 tablespoons of sugar. If you are adding denbu (sweet fish flakes) to the sushi rice, use less than 1 tablespoon of sugar.
