Simple Eggplant with Cheese

A simple cheese and eggplant dish.
Your kids will love this!
It's an easy dish to make when you need one more dish.

Ingredients: 2-3 servings

2 small
Melting cheese
100 g
Ketchup (or pizza sauce)
2 tablespoons
Dried parsley
1 tablespoon
Olive oil
2 tablespoons


1. Slice the eggplant into 1 cm thick rounds, and soak in water for a minimum of 15 minutes to remove any bitterness.
2. Put 2 tablespoons of oil into a frying pan. Add the eggplants and stir-fry.
3. When the eggplant is cooked, cover the pan and steam-fry over low heat.
4. Once the eggplant becomes soft, align on a heatproof dish, and sprinkle on the ketchup. Top with heaps of melting cheese.
5. Bake for 5 minutes in a 150℃ preheated oven. Once the cheese is nicely melted, it's done!
6. You can certainly add the cheese and ketchup into the frying pan in Step 3. Cover the pan to steam-fry.
