Asparagus and Bacon Egg Stir Fry

A simple recipe perfect for when you need one more dish or a snack. It's colorful and nutritious.

Ingredients: 2 to 3 servings

Asparagus
1 bunch (4 stems)
Half-strip of bacon
1 pack (5 pieces)
Egg
1
Salt and pepper
to taste
Vegetable oil
as needed

Steps

1. Parboil the asparagus.
2. Cut the asparagus and bacon into easy to eat pieces.
3. Heat vegetable oil in a pan, add the asparagus and bacon, and lightly fry. Season with salt and pepper.
4. Add the beaten egg, fry some more, transfer to a serving plate and enjoy.

Story Behind this Recipe

I got a bit bored with the fried asparagus and bacon dish I always make, so I added an egg for a bit of colour and variety. It turned out nicely.
