Rinse the strawberries and pat dry. Put them into a bowl. Spin the bowl as you add granulated sugar so that it will coat the berries. Set aside for half to a whole day.
The photo shows how it looks like after half a day. As you can see, the strawberries will release some syrup (sweet juice). Mash the berries lightly with a fork.
Add gelatin to ◎ water to soak and soften. In a small pan, heat up the syrup (Step 2) with 150 ml water and dissolve in the sugar. Also add the softened gelatin to dissolve.
Add lemon juice and turn the heat off. Cool the bottom of pan in ice-cold water. Stir and let it cool down.
Dampen in your preferred container and pack with the strawberries from Step 2. Pour in the jelly mixture (Step 4) and chill in the fridge to harden.
Story Behind this Recipe
I used to simmer the strawberries briefly to make jelly, but I wanted to come up with a way to make berry-colored jelly that tastes even more fresh. Here's a variation without cooking the strawberries. I based this on Recipe ID: 1057907 "Strawberry Preserve-Jam".
I had 50 ml of syrup in Step 2. Please adjust the amount of water to add in Step 3 so that in total the mixture comes out to be 200 ml.
