Soy Bean Hamburger Steaks

These burgers are macrobiotic-styled and very satisfying without using meat or eggs. Make them for your dinner. They are tasty even after cooled down and so are good for your lunch box.

Ingredients: 3 to 4 servings (making 6 small burgers)

Cooked soy beans
200 g (1 cup)
3 cm
Shiso leaves
about 3 tablespoons
Soy sauce
1 1/2 tablespoons
Grated ginger
a 3 cm knob
Ground sesame seeds
1 tablespoon
1 teaspoon
Salt and pepper
a small amount
a small amount (optional)
Japanese dashi stock powder
1 teaspoon
Japanese-style mushroom sauce
Mushrooms of your choice
1 bunch
Dashi stock
150 ml
Soy sauce
2 tablespoons
1 tablespoon
1 tablespoon
Katakuriko dissolved in water
1 tablespoon
Green onions or scallions
as needed (optional)


1. Crush the cooked soy beans with your pestle & mortar or in a food processor.
2. Chop the onion and carrot finely and microwave for two minutes. Julienne the shiso leaves.
3. Put all the ingredients except the sauce ingredients into a bowl and mix together.
4. Shape the mixture into small balls and fry in a frying pan with oil until crispy and golden on both sides.
5. In the same frying pan stir-fry the mushroom quickly and add the dashi stock, soy sauce, sugar and mirin.
6. Check the taste and if it is alright, add the katakuriko dissolved in water to thicken the sauce. Sprinkle with chopped green onion and pour over the burgers.
