Yellowtail 'Ryukyu' Rice Bowl

Try this whenever you're able to obtain fresh cuts of sashimi-grade yellowtail.

Ingredients: 2-3 servings

Buri (yellow-tail, sashimi quality)
250 g
Soy sauce
2 tablespoons
Sake for cooking
2 tablespoons
1/2 teaspoon
Ground sesame seeds
To your liking
Young green scallions
Add as much as you need


1. Whisk the eggs well.
2. Combine the sake to the soy sauce. Add the wasabi and mix well.
3. Add the wasabi soy sauce to the beaten egg.
4. Cut the fish into small cubes and put in the egg and seasoning mixture. Leave in the fridge for a while.
5. Add a lot of chopped scallions and sesame seeds just before eating. Add some shiso leaves if you like.
6. Transfer onto the hot rice and serve. You could also serve with a dollop of grated yamaimo yam.

This is my home town Oita's local speciality dish that I grew up on. It's best served with a lot of broth.
