Julienne the carrot, wrap in cling film, and microwave for 30 seconds.
Slice the cucumber thinly. Sprinkle with a little salt and squeeze.
Beat the eggs. Heat vegetable oil in a pan, and cook chunky scrambled egg.
Mix soy sauce and the sweet and sour sauce in a bowl, and add the carrot, cucumber and egg. Toss and serve on a plate. Sprinkle with white sesame seeds.
I added cellophane noodles for this version. This is filling and also good!!

I wondered if I could make a sunomono-style salad with vegetables I had on hand.
Instead of finely scrambled egg, if you make a very thin omelette and slice thinly, it would be easier to eat. I don't want to take time, so I made scrambled eggs :) You could season with ponzu. Adjust the amount to suit your taste.
Mayonnaise and sweet vinegar sauce as seasonings would be tasty too!
