Tomato and Salmon Red Marinated Salad

Tomato and Salmon Red Marinated Salad

This is an Italian style salad with ingredients that are just cut up and mixed together. If you don't like the rawness of fresh salmon, use smoked salmon instead. Try this when tomatoes are inexpensive!

Ingredients: 2 servings

Fresh salmon (sashimi grade)
100 g
Leafy lettuce (or iceberg lettuce)
an appropriate amount
Olive oil
2 tablespoons
Salt and pepper
a small amount
Sweetened vinegar
2 tablespoons
Black pepper
to taste
Dried basil
to taste
Italian parsley
If you have it
See our family recipe for sweetened vinegar here (Recipe ID: 1480222).

1. Slice the onion thinly, put in a bowl of water, then drain and squeeze out the excess moisture well.
2. Cut up the salmon and tomatoes into 1cm cubes and put in a bowl. Drizzle in the olive oil and mix.
3. Add the sweetened vinegar to the bowl. Season with salt and pepper.
4. Add the dried basil and onion into the bowl and mix. Mound on top of a plate lined with lettuce leaves and it's done!

Story Behind this Recipe

I made this recipe for my salmon-hating mother in law. I thought I'd mix it up with her favorite tomatoes, and try to camouflage it in all that red color. It was a big success! It's easy, but delicious!
