Garlic Shoot and Aburaage Miso Soup

Garlic shoots are the stars in this miso soup. It has a mild garlic flavor and is delicious.

Ingredients: 2-3 servings

Garlic shoots
1 bunch (about 80 g)
1 piece
Dashi stock
2 1/2 cups - 500 ml
2 1/2 tablespoons


1. Chop up the garlic shoots into about 4 cm pieces. Pour boiling water over the aburaage to drain the excess oil, then slice.
2. Bring the dashi stock to a boil, add the garlic shoots and aburaage and simmer.
3. When the garlic shoots are softened, turn off the heat and dissolve in the miso. Turn the heat back on to low, heat up the miso soup and serve.

Garlic shoots are usually used in stir fries, but I learned that they're delicious simmered too, so I tried them in a miso soup.
