Slice the new potatoes into matchsticks. Slice the sausages into thin diagonal pieces. Heat the butter, olive oil, and garlic in a frying pan over medium heat, then stir-fry the potatoes.
When all ingredients are coated evenly in oil, and when the potatoes are tender, add sausage slices and continue frying.
Cover with a lid, and steam for 5 minutes, removing the lid now and then to turn the potatoes and sausage to brown them evenly.
Add the curry powder, salt, pepper to taste, sprinkle with dried parsley, and serve.

I whipped this up when I wanted a side dish but it was so delicious it could be a main dish too. A tasty way to prepare new potatoes.
