Easy Soba Tsuyu (Noodle Dipping Sauce) that Tastes like the Real Thing

I make this for a 4-person family whenever I run out of store-bought soba tsuyu (dipping sauce).

Ingredients: 4 servings

Mirin
1/2 cup
Water
2 cups
Soy sauce
1/2 cup
Bonito flakes
a pinch (12-15 g)

Steps

1. Put the mirin in a pot and bring to a boil (to evaporate the alcohol).
2. Add water and agitate the pot to mix, then add the soy sauce.
3. Add the bonito flakes, quickly agitate the pot to mix, then boil for 1-2 minutes (it will turn cloudy if you mix it).
4. Turn off the heat, then strain when the bonito flakes sink to the bottom.
