Filling Egg Toast

Filling Egg Toast

Normally, when you top sliced bread with a fried egg, the egg doesn't quite cover the whole slice, but you won't have that problem with this recipe!

1. Beat the egg. Finely shred the cabbage.
2. Start toasting the bread.
3. Pour the egg into a frying pan, and when it starts to set, top with the cabbage.
4. Put the toast on top, and press down lightly to make the bread stick to the egg. If the egg sticks out a bit, tuck it under the bread with a spatula.
5. Turn the toast over with a spatula, and then transfer to a plate.
6. Top with mayonnaise and ketchup to finish! If you have the time to spare, squirt in a zig-zag pattern.
7. Run the tip of a chopstick vertically back and forth over the surface of the toast, to make this pattern.

Story Behind this Recipe

I like eating toast topped with a fried egg, but if I used sliced bread from a pullman loaf, the egg doesn't cover the entire slice, so I thought I'd beat the egg and cook that before putting it on the toast.
