Jam & Buttercream Sandwich Cookies

Jam & Buttercream Sandwich Cookies

Crispy cookies with a layer of special homemade buttercream and jam in the middle. Cutting them out takes a bit of effort, but they turn out really cute. These make great gifts.

Ingredients: 30 - 35 sandwich cookies

Cake flour
160 g
Almond flour
40 g
100 g
70 g
Egg yolk
Vanilla essence
As needed

1. Sift together the cake flour and almond flour.
2. Put the softened butter and sugar in a bowl and mix.
3. Add the egg yolk to the bowl in Step 2 and mix.
4. Add the dry ingredients from Step 1 to the bowl in Step 3 and mix with a spatula to bring the dough together.
5. Wrap in plastic wrap and rest in the refrigerator for about 2 hours. You can make the dough the day before.
6. Sandwich the dough between two sheets of plastic wrap and use a rolling pin to roll it out to about 2 mm thick.
7. Using cookie cutters, first cut shapes from the center of the cookies, then cut out the edges. If the dough is too soft, dust with flour.
8. Bake for about 15-17 minutes in an oven pre-heated to 355°F/180°C. The photo shows cookies that I stacked after baking.
9. You can refer to this recipe to make the buttercream. Recipe ID: 985593
10. Spread the buttercream on the bottom cookie and then put some of the jam on top.
11. Add another cookie to make a sandwich and it's done...these make cute presents.
