Mos Burger-Style Chicken Rice Burger

These chewy rice buns won't fall apart while eating!

Ingredients: 4 burgers

Rice Buns
Plain cooked sticky rice
2 rice cooker cups worth (360 ml uncooked)
Soy sauce
4 tablespoons
Mirin
4 tablespoons
Sesame seeds
1 tablespoon (optional)
Sesame oil
1 tablespoon
Chicken Patties
Minced chicken
150 g
Onion
1/4
Carrot
a small amount
Green bell pepper
a small amount
Panko
2 tablespoons
2 parts tofu (drained) to 1 part miso
1 tablespoon
Salt and pepper
to taste
Juice from grated ginger
1 teaspoon
Teriyaki Sauce
Soy sauce
2 tablespoons
Mirin
1 tablespoon
Sugar
1 tablespoon
Sake
2 tablespoons
Water
2 tablespoons
Katakuriko
1 tablespoon
Lettuce
Sliced onion
Japanese mustard mixed with mayonnaise
Egg
Your choice of toppings

Steps

1. First make the rice buns. Heat the soy sauce and mirin until it boils, then remove from the heat and add the katakuriko and sesame seeds.
2. Evenly mix the sauce from Step 1 with slightly firm cooked rice.
3. Shape the rice buns to whatever size you prefer (use a little water to form them).
4. Heat the sesame oil in a frying pan and fry the rice buns until crispy.
5. Combine the chicken patty ingredients in a food processor and blend untilthe vegetables are finely chopped.
6. Form patties into your desired size, cook in a frying pan, then coat in teriyaki sauce.
7. Top with lettuce, sliced onions, sunny-side-up eggs, mayonnaise, or other toppings of your choice and serve.

Mos Burger's rice burger buns are chewy and they don't fall apart. They aren't just simply rice balls made into patties! This is the result of my trial and error to find an easy-to-eat burger for kids.
