A Simple Salad

A salad to bring out the natural flavors of vegetables.

Ingredients: 2 servings

Olive oil
5 tablespoons
Vinegar
5 tablespoons
Salt
1/3 teaspoon
Black pepper
To taste
Garlic (grated)
1/2 clove
Vegetables
Whatever you like

Steps

1. Mix all the ingredients together.
2. Combine with vegetables of your choice. You can use several kinds of vegetables at once, I prefer eating one kind of vegetable at a time.
3. Carrots: Finely julienne the carrots, and blanch briefly.
4. Nanohana (rape blossoms): Boil, and cut into bite sized pieces.
5. New potatoes: Scrub the skins well, cook in the microwave and mix with the dressing.
6. I usually make 2 servings of salad at a time, and use 2 to 3 tablespoons of the dressing. Use as much as you prefer.
7. Add 1/4 of an onion, finely chopped, to the dressing for a delicious variation.
8. The dressing is also good with tender spring cabbage, carrot and canned tuna.

Story Behind this Recipe

I re-created the salad dressing which I used to eat at my parents' home. I think the original version had more vinegar though...
