Teriyaku Pork Steaks with Shiso Vinegar Sauce

Easy and quick pork 'steaks' made with cheap pork offcuts. Even if you use inexpensive meat it's delicious with the shiso vinegar sauce. It'll really get your appetite going.

Ingredients: 2 servings

● Thinly siced pork offcuts
200 g
● Salt
a small amount
● Pepper
as small amount
● Sake
1/2 tablespoon
as needed
For the teriyaki sauce:
Soy sauce
1/2 tablespoon
1/2 tablespoon
1 teaspoon
1 teaspoon
For the shiso-vinegar sauce:
Shredded shiso leaves
10 leaves
Finely juliennned ginger
1 piec
Rice vinegar
1 1/2 tablespoons
1 1/2 teaspoons
a small amount
Vegetable oil
as needed
Salad (raw vegetable salad, potato salad, etc.)
To taste


1. Mix the shiso-vinegar sauces together.
2. Mix the teriyaki sauce ingredients together.
3. Cut the meat up roughly, season with salt, pepper and sake and massage in the seasonings. There's no need to cut the meat if the pieces are around 5 to 6 cm in size.
4. Divide the meat into 2 portions and form into flat patties. Dust with katakuriko.
5. Heat some oil in a frying pan over medium heat and fry the 2 pork patties on both sides. Turn the heat down to low, put on a lid and steam-cook until cooked through. Turn the heat up to medium-high, add the teriyaku sauce and coat the meat with it.
6. Put the pork 'steaks' and salad on plates, and pour the shiso-vinegar dressing over it.

Story Behind this Recipe

We use pork offcuts a lot in our house to make sausages, meatballs and so on. This time I tried making a pork 'steak' style dish. The sweet-salty and sour sauce goes very well with pork, and it's a hit every time I serve it to my family, so I decided to upload it.
