Heat sesame oil and fry the onion, bean sprouts and garlic chives (in this order) quickly.
Turn down the heat and add the combined ＊ ingredients. Stir and coat the vegetables with the seasonings.
Make a small well for the eggs and break them in. Cover the pan.
When the egg yolks are half-done, serve them up.
Mix the vegetables and the soft eggs before you eat. Cook the eggs to your liking.
PS: Drain the bean sprouts well before stir-frying them!

Suntory had a promotional campaign for spring recipes and so I made this recipe. Enjoy the crunchiness of the vegetables!
This dish is very easy to make. You don't need any tips, really. Fry the onion slightly longer than other vegetables. Fry the bean sprouts quickly to retain the crunchy texture. This time I paid 98 yen for one packet of eggs and 25 yen for bean sprouts, 100 yen for 2 bunches of garlic chives and 100 yen for 3 onions. For one serving it was 100 yen. I like challenging myself to see how low I can bring down the cost.
