Cabbage! Delicious and Healthy Okonomiyaki

This is lots of cabbage held together by the batter. It is cooked while covered with a lid and uses grated potato, so it's fluffy.

Ingredients: 3-4 okonomiyaki pancakes

White flour
1 cup (about 100g)
☆Hot water
☆Dashi stock granules
1 teaspoon
1/2 teaspoon
Freshly-grated potatoes (You don't have to peel the skins)
1 medium potato (about 100g)
1/2 head (about 750g)
Green onions or scallions
2/3 stalk
Sakura shrimp - tiny dried shrimp
to taste
2 tablespoons
Tempura crumbs (optional)
to taste
Pork belly meat or thinly-sliced meat; you could even use pre-prepared shrimp or squid if you like
as much as you like
Okonomiyaki sauce, mayonnaise
to taste
Kezuribushi (dried fish shavings)
to taste


1. Mix together ingredients marked with ☆ to make a thick broth. Whisk the egg in a bowl, and mix in all of the ingredients aside from the tempura crumbs.
2. Shred the cabbage. Slice the green onions.
3. Mix Steps 1 and 2 together with cooking chopsticks.
4. Heat oil in a pan, and spread out the meat.
5. Add lots of batter and sprinkle with tempura crumbs, and shape the edges. Cook until golden brown.
6. Slide it onto the lid and flip over. Cover with a lid, and cook until golden brown.
7. Transfer to a plate, add the sauce and mayonnaise, top with kezuribushi, and it is done.
