Fluffy Madeleines with Orange Peels

Madeleines are a classic baked snack. This recipe uses grated orange peels. A refreshing aroma will fill your mouth with every bite.

Ingredients: 8 in a madeleine pan

Cake flour
100 g
Baking powder
2/3 teaspoon
100 g
White sugar
70 g
Vanilla extract
a small amount


1. Combine the cake flour and baking powder, and sift twice.
2. Melt butter in a double boiler.
3. Grate the orange peel while rotating it.
4. When there is no more peel left, cut in half, and squeeze 20 ml of orange juice using a juicer.
5. Break eggs into a bowl, and mix well.
6. Add sugar, and whip in the double boiler until thickened.
7. Add the grated orange peel, and mix. Add the orange juice from Step 4, vanilla extract, then mix some more.
8. Add the sifted dry ingredients, and fold in from the bottom.
9. Add melted butter from Step 2 by pouring it on the spatula.
10. Mix quickly with a cutting motion and the batter is done.
11. Pour the batter with a spoon into the cups to fill about 80% full, and bake in the oven preheated at 180℃ for 20-25 minutes.
12. Look how fluffy they are! Adjust the baking time accordingly. 23 minutes was perfect in our oven.
13. They will taste like fruit cakes with raisins scattered on top.
