Obihiro Pork Don ~ Big Bowl with Pork Offcuts!

This sweet-savory pork rice bowl is popular in Obihiro, Hokkaido!
It's cheap if you use pork offcuts.

Ingredients: 2 servings

Pork offuts
200-300 g (or more)
Crystal sugar (or normal sugar)
3 tablespoons
3 tablespoons
Soy sauce
5 tablespoons
Cooked white rice
As much as you want!
White part of a scallion (optional)
as needed
Egg (optional)
Raw or soft-set, to your preference


1. Use pork loin or belly or whatever cuts of pork preferred.
2. Heat the pan and spread the slices of pork as you stir fry quickly over high heat. Transfer the pork to a plate when it's still slightly tinged pink.
3. Plot the oil in the pan with a paper towel. Add crystal sugar, sake, soy sauce in the pan and heat it up!
4. Cook over medium or high heat. Keep cooking even when the sugar is dissolved. Be patient until the sauce thickens. When the sauce is thickened, add the meat!
5. Mix with the sauce!! Work quickly, about a minute.
6. Serve rice in a bowl and top with the meat and the sauce.
7. I made fried rice with the leftover sauce.
8. The sauce goes well with rice balls wrapped with sliced meat.

When you order this at any restaurant in Obihiro city, there's so much meat that you can't see the rice below! When prepared at home, each family has their own spin to it. My family prefers the seasoning to be concentrated.
