Avocado and Maitake Mushroom Garlic Saute

An umami-rich dish seasoned with bacon and garlic. Use whatever mushrooms you prefer.

Ingredients: 2 servings

50 g
Maitake mushrooms
1/2 bunch
1 clove
Olive oil
1/2 to 1 teaspoon
White wine or sake
1 teaspoon
a pinch
Coarsely ground black pepper
to taste


1. Thinly slice avocado and bacon into 1 cm pieces, finely shred the maitake mushrooms, and mince the garlic.
2. Add olive oil to the frying pan. Fry the garlic on low heat until aromatic, then toss the bacon and render the oil.
3. Turn up the heat to medium and fold in the maitake mushrooms. Add the avocado and toss lightly with white wine (or sake).
4. Cover with a lid and steam for 2 - 3 minutes.
5. When avocado and maitake are well cooked, sprinkle with salt and pepper and serve. Adjust with more salt if necessary.

I love avocados!
I like the combination with maitake best, but it'll work with king oyster mushrooms or shimeji mushrooms.
