Ra-yu Spicy Chili Sesame Oil with Lots of Garlic

Homemade fried garlic and fried onion whet your appetite. This ra-yu is delicious over anything.

Ingredients: 350 ml

6 cloves
Small red chili peppers (sliced into rounds)
2 tablespoons
★ Salt
1/3 teaspoon
★ Sugar
1/2 teaspoon
★ Vinegar
1 tablespoon
★ Soy sauce
a small amount
★ Chicken soup stock granules
a small amount
★ Umami seasoning
a small amount
Vegetable oil
150 g
Sesame oil (or vegetable oil)
150 g


1. Cut the onions into quarters, and slice thinly. Put in a heatproof container, and microwave without a cover for 10 minutes to evaporate the moisture.
2. Slice the garlic thinly, and microwave for 1 1/2 minutes at 1000 W uncovered to evaporate the moisture.
3. Stir fry the onions in plenty of vegetable oil until golden brown. Put the garlic and red chili peppers in another frying with oil, and put the heat on to low.
4. Stir-fry until the garlic is light brown. Add the golden brown onion and the ★ ingredients, and fry until the garlic and onion are crispy.
