Easy Vegetable Soup Made with Stock Cubes

Add any vegetables you have in your fridge to this nutrition-packed soup. If the veggies are cut into 1 cm dice, they're easy to eat.

Ingredients: 4 servings

Whatever vegetables you have in your refrigerator:
Carrot
1/2
Potatoes
1
Onion
1/2
Cabbage
3 leaves
Kabocha squash
1/5
Tomato
1
Bacon or wiener sausage
2 slices (or a few sausages)
Water
700 ml
Soup stock cubes
2
Olive oil
1 tablespoon

Steps

1. Cut the vegetables into 1 cm dice. Peel the tomato and chop up.
2. Heat a pan. Add olive oil when the pan is hot, and sauté the vegetables.
3. When the vegetables are coated in oil, add water, cover with a lid, and simmer. When it comes to a boil, add the stock cubes, replace the lid, and simmer over low-medium heat until the vegetables are tender.
4. When all the ingredients are tender, it's done. Season with salt and pepper to taste.
