Doll Festival Diamond Shaped Chirashi Sushi

Doll Festival Diamond Shaped Chirashi Sushi

This is made in a hishimochi (a diamond shaped mochi cake) shape with 3 different colors of sushi rice. This can be transformed into an extravagant dish to serve to guests just using sashimi grade fish. Make it for Dolls Festival!

Ingredients: 2 people

Sushi Rice
About 200g
1 tablespoon
Sakura shrimp - tiny dried shrimp
2 tablespoons
Toasted sesame
1 tablespoon
1 tablespoon
2 pinches
Lotus root
2 slices
Sashimi cuts
As needed
Kinome (Sansho pepper tree shoots)
If available

1. Divide the sushi rice into 3 equal portions; add aonori to 1/3, and add smashed sakura shrimp to another 1/3, and mix. Mix white sesame into the remaining portion.
2. Use an empty milk carton as a mold, and pack in half of the sakura shrimp sushi rice.
3. Add the white sushi rice on top, and pack in the aonori seaweed sushi rice.
4. Mix the eggs together with sesame and salt, make an usutaki omelette, and cut it into thin strips. Cut the sashimi into small bite-sized pieces. Quickly boil the lotus root.
5. Decorate with kinshi tamago (omelette cut into thin strips), sashimi, and lotus root. Then garnish with kinome.
