Colorful Ground Pork and Vegetable Curry

This is a colourful, cute, delicious, and enjoyable curry.
This recipe only requires stir-frying vegetables you have in your fridge.

Ingredients: 2 servings

Plain cooked rice
as much as you like
Ground pork
80-100 g
Green pepper
1/2
Bell Peppers - 2 colours (red and yellow)
1/5 each
Carrot
1/2
Onion
1/4
Garlic
1 clove
Raisins

Katakuriko slurry
dissolve 1 tablespoon of katakuriko in 2 tablespoons of water
Combined seasoning ingredients:
Soy sauce
1 tablespoon
Japanese Worcestershire-style sauce
2 tablespoons
Dashi stock
1 tablespoon
Curry powder
2 tablespoons
Water
50 ml

Steps

1. Mince the vegetables into the same size as the ground meat. (I added the honey ginger Recipe ID: 1058445, as illustrated in the picture.)
2. Heat oil in a frying pan, add garlic, and fry until fragrant. Add onion, carrot, pork, green pepper, bell peppers, and raisins in that order, and continue stir-frying.
3. Add the combined * seasoning ingredients, and bring to a boil. Thicken with dissolved katakuriko in water.
4. Enjoy with rice! Bell peppers and raisins are slightly sweet, and go well with curry flavour.

Story Behind this Recipe

I wanted to eat delicious curry cooked with a small amount of ground meat and plenty of vegetables!!
This dish has smooth texture, but it's satisfying.

The flavour of this dish goes well with spinach, tomatoes, edamame, kabocha, sweet potatoes, (any kind of vegetable, basically) so it's a good recipe to have around.
