Easy Panda Bread made with Pancake Mix!

I made Anpan (bread filled with sweetened red bean paste) in the shape of pandas. They were easy to make using pancake mix. Kids love these.

Ingredients: 6 pandas

Pancake mix
15 g
Plain yoghurt
65 g
Cocoa powder
1 teaspoon
Anko (store-bought)
120 g
Decoration pencil (Black/white)
as needed

1. Using plastic wrap, roll the anko paste into 6 balls.
2. Put the pancake mix, butter and yoghurt in a bowl and knead until the dough is no longer sticky. If it sticks to your hands, add a little more pancake mix or flour.
3. Add the cocoa powder to 1/4 of the dough from Step 2, and knead and mix. Roll the rest of the dough into 6 balls. *ind a flat surface and mix it using the palms of your hands.
4. Divide the Step 3 cocoa dough into 24 individual balls. Wrap in plastic wrap to prevent drying out.
5. Roll out the 6 pieces of plain dough using a rolling pin, and place a ball of anko in the centre of each.
6. Lightly stretch the dough around the anko, gather it in the centre, and close firmly.
7. Set the oven to 170℃ and place the 6 pandas on a baking tray lined with parchment paper, leaving space in between. Put 2 pieces of cocoa dough on for the ears, and another 2 for the nose. Press on hard so they stick.
8. Bake for 15 minutes. When cooled, draw on the eyes, and they're done. ♪ Enjoy them fresh from the oven.

Story Behind this Recipe

I made my own version of a recipe I found in a recipe book. My friend's kids were delighted to receive these.
