Put minced onions and margarine in a heat-resistant plate, microwave for 3 minutes at 500 W and mix.
Put the panko and vegetable oil on a heat-resistant plate, mix and microwave for 6 minutes at 500 W! They easily burn, so mix about 5 times while cooking. It's done once it browns.
Wash the potatoes, wrap in cling film and microwave for 7 minutes in 500 w until softened, then peel the skin and mash.
Combine the salt and pepper seasoned meat (refer to hints), onions, salt and pepper with the potatoes.
Wet you hands and shape the croquettes. Coat with flour, egg and panko, and bake for 20 minutes at 250°C.
Story Behind this Recipe
I wanted to make healthy croquettes to serve my family.
You can use beef or pork, and it could be ground up or offcuts. Chop the meat into small pieces if it is too big. It's also good adding bacon to the meat mixture instead of seasoning with salt and paper. I used thinly sliced pork for the version on the top photo.
