Katta family's Kumquat jam

Katta family's Kumquat jam

It's like a very refine flavored marmalade. Not just for a spread on bread! Kumquat tea is also good.

Ingredients: for 1 jar

Lemon juice
1 tablespoon

1. Wash the fruits well and take the stem ends off.
2. Boil them and drain 2 times to reduce the bitterness. After that, eat and check the bitterness. If it's too bitter for you, boil them and drain one more time.
3. Cut them into half crosswise and take the seeds out. Shred the skin finely and chop the fruits roughly.
4. Put the skin, fruit, sugar, lemon juice and 2 table spoons of water in a pot. Simmer it and mix occasionally until the texture gets thickened.
5. Pack into a jar that has been sterilized in boiling water and close the lid while the jam is hot and you can keep it for a couple weeks.

Story Behind this Recipe

I unexpectedly received Kumquats as a gift! Similar to Yuzu Jam, I experimented several times and came up with this good recipe.
