Mackerel Simmered In Miso

This really wakes up your appetite and makes you eat more rice! The rich miso flavor is irresistible.

Ingredients: 4 slices

Mackerel filets
4 slices
1 piece
5 to 6 cm
Seasoning ingredients:
1 1/2 cups (300 ml)
1/2 cup (100 ml)
4 tablespoons
Soy sauce
1 tablespoon
about 4 tablespoons


1. Make decorative cuts in the mackerel.
2. Julienne the ginger.
3. Put the konbu seaweed and water in a pan and bring to a boil. Add the ginger (reserving some to use as garnish), sake, soy sauce and sugar.
4. When it comes back to a boil add the mackerel filets skin side up. Skim off the scum.
5. When the scum has been removed, put a small lid right on top of the simmering food (or use a piece of foil or cooking parchment paper). Simmer over medium heat for 7 to 8 minutes.
6. Dissolve in the miso.
7. Drizzle the miso sauce into the pan, and coat the fish with it while simmering. Transfer to serving dishes and scatter with the reserved ginger.
