Chocolate Muffins With White Chocolate Chips

Here's a recipe for fluffy muffins with cocoa powder and white chocolate chunks.

Ingredients: 5 muffin liners

★Cake flour
100 g
★Cocoa powder
20 g
★Baking powder
1 teaspoon
Margarine (or butter)
50 g
60 g
50 ml
White chocolate bar
1 (40 g)


1. Combine all the ★-marked ingredients and sift. Bring the margarine to room temperature or microwave to soften.
2. Add margarine and sugar into a bowl and whisk until creamy.
3. Add the beaten eggs in small batches. Add milk and continue to whisk.
4. Add the ★ ingredients into the bowl from Step 3 and mix lightly with a spatula.
5. Dice the white chocolate into 1 to 1.5 cm squares. Divide into two portions.
6. Mix one portion of the chocolate into the dough.
7. Pour the dough into muffin cups and fill to about 70%. Top the dough with the remaining chunks of chocolate.
8. Preheat the oven to 180C/356F. Bake for 20 minutes. If you pierce one in the middle with a skewer and it comes out clean, they're done.
