Garlic chives, Chinese cabbage, welsh/spring onion, mushrooms, tofu etc.
Wash the clams, grate the garlic. Cut the vegetables into bite-sized pieces.
The ingredients will look something like this. (The picture omits the pork and tofu.)
Add sesame oil to the pot.
Lightly sauté the kimchi until it becomes fragrant.
At this point, the soup stock is made. Add the clams.
Add the water. Boil.
Add the chicken stock granules, sake, soy sauce, miso, and garlic. Taste (if it isn't strong enough, adjust accordingly). And the soup is finished!
Now, add the ingredients.
Boil for awhile, and it's done!
*If you like it spicy, add gochujang (Korean red chili paste) to adjust the spiciness.
Story Behind this Recipe
This is personally how I make it; it's delicious. As expected, this is how it should be done! You can make it with only 3 steps, and then add any ingredients you'd like for an extra-delicious soup. The amount of salt is on the moderate side as well. Regulate the spiciness with gochujang (Korean red chili paste).
I believe that the 3 steps to making a delicious Kimchi Hot Pot are as follows:
1) Cook the kimchi in sesame oil until fragrant first. 2) Add clams etc. (for shellfish soup stock) and pork etc. (for meat soup stock) to make a mixed soup stock. 3) The grated garlic gives the flavor a finishing touch.
