Easy Molten Chocolate Cake with Pancake Mix and Chocolate

These are done in 15 minutes and are nearly foolproof. Molten chocolate cakes are hard to get just right, but with these, even if you over-bake them they won't become hard.

Ingredients: 4 small muffin-sized cakes

◎Pancake mix
100 g
◎Pure cocoa powder
2 tablespoons
1 tablespoon
4 tablespoons (60 ml)
Melted butter
15 g
4 to 8 pieces


1. Melt the butter and preheat the oven to 180℃.
2. Combine the ◎ ingredients in a bowl and mix with a whisk (this is instead of sifting). Next, add the ○ ingredients and mix with a whisk.
3. Add the melted butter and mix with the whisk until glossy.
4. Line the muffin cups with paper cups and fill with half of the batter. Top with chocolate pieces (1 or 2 per cup, depending on your preference).
5. Top with the remaining batter and bake at 180℃ for 10 minutes.
6. If using a bento cup, use a muffin pan that won't allow the cups to spread out too wide. You can also use pudding cups.
7. If using sturdy paper muffin cups, you don't need to use a muffin or pudding pan.

9. By replacing the cocoa powder with milk cocoa powder, you can make the muffin on the right. The pancake mix makes it sweet, so children love it, too.
