[Basic Recipe] Crème d'amandes

This lovely cream that smells like almonds is used to make tarts. The combination of ingredients is basic.

You could also bake bread filled with this cream.

Ingredients: Makes about 2 large tarts

100 g
100 g
☆ Almond flour
100 g
☆ Cake flour
10 g
1 and 1/2
Maraschino (or liqueur of your choice)
to taste


1. <To prepare> Combine the ☆ ingredients. Bring the butter to room temperature. Whisk the egg.
2. <To make the dough> Put the butter in a bowl, then whip the mixture into a cream. Add sugar, then continue to whip until the mixture turns a pale white.
3. Mix in the egg a little at a time, then add the maraschino, and mix again.
4. Sift in the ☆ ingredients, then lightly mix until even. ※ Stirring while moving the spatula in the shape of a "J" makes mixing easy.
5. Use it in a tart, or, since it doesn't melt when baked, mix it with custard and use it as filling when baking bread.
