A very hearty sandwich with juicy chicken thigh meat and egg.
I was going to make a light sandwich for breakfast, but when I opened the refrigerator, I saw that the chicken was near its best-by date...so I decided to make a pretty hearty sandwich.
Toasting the sliced bread lightly makes it really go well with the chicken. It takes some time to cook the chicken through properly, so try to butterfly it so that it's an even thickness all over.
