Banana Chocolate Chip Muffins

Banana Chocolate Chip Muffins

As soon as you take a bite, you will enjoy the fragrance of a banana and plenty of delicious chocolate chips from muffins. I have made these for Valentine's Day before, so they remind me of that.

Cake flour
130 g
Unsalted butter
60 g
80 g
Soy milk
2 tablespoons
1/2 teaspoon
Baking powder
5 g
Chocolate chips
to taste

1. Cream the room temperature butter and sugar with a whisk until pale and fluffy.
2. Combine the beaten egg and soy milk in advance, and add the mixture little by little while mixing.
3. Mash the banana with a fork, add to the bowl, and mix.
4. Add the chocolate chips, and fold in with a cutting motion with a spatula.
5. Sift the cake flour, cinnamon, and baking powder into the bowl.
6. Fill the paper cups with the batter about 1/2 full using a spoon. Sprinkle with chocolate chips.
7. Bake in the oven preheated to 180℃ for 30 minutes, and it's done.
8. Wrap them, and give them away as Valentine's Day gifts.

Story Behind this Recipe

I made these muffins because I wanted to use up a ripe banana.
