Simple and Easy Salt-Flavored Udon Noodles

Try this when you have a cold, for solo lunches or night time snack. It's simple, warm and comforting, even on days when you don't have much of an appetite.

Ingredients: 1 serving

Cooked udon noodles
1 pack
Pork (whatever cut you like)
about 50 g
Japanese leek (or onion)
about 50 g
Carrot
about 20 g
Shiitake mushrooms
about 10 g
Chikuwa (optional)
1
Water
500 ml
Dashi stock granules
a bit less than 1 teaspoon
Salt
1 heaping teaspoon
Egg

Steps

1. Cut the vegetables and pork into easy to eat pieces.
2. Heat some vegetable or sesame oil in a frying pan and stir-fry the pork. Season with a little salt.
3. Add the vegetables and stir-fry quickly, then add the water and bring to a boil.
4. Skim off the scum, and season with the dashi stock granules and salt. After you've gotten rid of the scum, add in the udon noodles.
5. While you're waiting for the water to come to a boil, beat the egg in a bowl.
6. When the soup has come to a boil and the vegetables are cooked, drizzle in the beaten egg.
7. Ladle into a serving bowl and it's done!

My mother used to make this for me when I was a child whenever I had a cold. Now it's a nostalgic family favorite.
