Heat 1 teaspoon vegetable oil in a pan. Sauté the onion over medium heat. Try not to burn it. Transfer momentarily onto a dish when softened.
Place the pan on damp cloth to cool down slightly. Again, spread 1 teaspoon of vegetable oil. Spread out the meat and cook over medium heat.
When both sides are slightly browned, gather to the center. Top with cooked onions, then season with salt and pepper.
Top with cheese. Sprinkle on coarsely ground pepper. Cover the pan and grill for 2-3 minutes over medium heat. It's ready to eat when the cheese melts and the bottom is crusty.
Story Behind this Recipe
The "Pork and Cheese" that I had at an okonomiyaki restaurant was so good, so I tried to observe how they made it. I also added onions when I cooked it at home, and my family absolutely loved it!
Make sure to spread out the meat to cook. Using pork belly results in a crusty finish because it contains lots of fat. Even if it doesn't turn out crusty, the fat will be juicy and flowing... It goes really well with rice.
