Tofu & Rice Crackers Vegetarian Hamburger

The rice crackers is a binder that holds the hamburger from falling apart! A chewy 100% vegetarian hamburger that doesn't use meat or eggs.


1/2 block
Rice Crackers (whatever flavor you prefer)
3 (if the rice crackers are thin, 4)
Soy Sauce
1 teaspoon
1 clove
☆White Mushrooms
8-10 (or whatever mushrooms you prefer)
Salt and Pepper
a small amount
2 teaspoons
Vegetable Oil
1 tablespoon (for cooking the ☆ vegetables) + as needed (for cooking the hamburger)


1. Put the tofu into a bowl and use a masher, etc. to mash into a paste. There's no need to drain it.
2. Break up the rice cracker into pieces and use a blender, etc. to grind into a powder.
3. Add Step 2 and the soy sauce to Step 1 and knead well.
4. Mince all of the ☆ vegetables and cook in a frying pan with vegetable oil. Flavor with salt and pepper.
5. Add Step 4 to 3, coat with katakuriko and mix well.
6. Make into burger patties and cook both sides golden brown in a frying pan with vegetable oil.
7. In my house, we top the burger with teriyaki sauce and sandwich it between bread for a Japanese-style burger.

Story Behind this Recipe

I saw online that the main ingredient in most rice crackers is non-glutinous rice and wheat flour. I figured the starch content could be use to keep hamburger patties together. So I gave it a go.
