Apple-Shaped Pumpkin Croquettes | リンゴのかぼちゃコロッケ

Go apple picking in your kitchen with these pumpkin, pork and cheese croquettes! ❤

Ingredients: Makes 8 croquettes

Kabocha squash
1/4 of the squash
Ground pork
Shredded cheese
1/2 cup
1/5 teaspoon
a pinch
2 teaspoons
as needed
Beaten egg
1 egg
as needed
Oil for frying
as needed
Leaf-shaped food picks (or toothpicks with red/green washi tape)
8 sticks

1. Remove the skin from the pumpkin, and cut it into bite-sized pieces. Place in a microwave-safe bowl, cover with plastic wrap, and microwave for 6 – 7 minutes. Then, mash the pumpkin with a fork while it is still warm.
2. Melt the butter in a frying pan, while finely dicing the onion. Add the onion and the ground pork to the pan, and sauté until the pork is fully cooked. Season with salt and pepper, mix together with the pumpkin, and allow to cool.
3. Divide the filling into 8 balls, and stuff the balls with the shredded cheese. Coat the balls in flour, egg, then roll in panko. Fry in oil at 170C until cooked.
4. If you do not have leaf-shaped food picks, fold a 2 inch long piece of masking tape in half around the top of a toothpick, making a flag-like pick. Trim the masking tape into the shape of a leaf, and repeat for all 8 toothpicks. Then stick the toothpicks into the top of the croquettes, and your apple-shaped croquettes are finished!

Story Behind this Recipe

I saw a recipe somewhere that used leaf-shaped picks, and I thought that they were adorable! I added fall flavours like kabocha, pork and melty cheese, and it felt like I was going apple picking while eating them!
