Have you ever tried frying tofu? It takes on a completely different texture. If you press the water out of tofu, mash it, then fry it, it becomes light and fluffy. It's an excellent and healthy meat, egg, or flour substitute. You can be a tad more generous with your seasonings, though, as tofu by itself tends to be rather subtly flavored.
