Mapo Doufu (Spicy Chili Tofu) 38 recipes

Mapo Doufu is the classic Sichuan dish. Its spicy and piquant fragrance is sure to stimulate your appetite. Ground pork and doubanjiang are stir-fried until aromatic, then simmered in a soupy broth with cubed tofu, before the mixture is thickened with katakuriko slurry for a silky finish. There are variations that replace the tofu with grilled eggplants, include cellophane noodles, or designed to be poured over a bowl of rice or ramen noodles. Be gentle with the tofu as the cubes could crumble while you are stir-frying them.
