Firm (momen) tofu is made of soy milk that is hardened once with 'nigari' (magnesium chloride solution) before it is crumbled, drained of its water content, and brought together again into blocks. It holds its shape even when heated, so it's perfect for grilling or frying. In the southernmost islands of Okinawa prefecture, they make a mean tofu and vegetable stir-fry dish called “champuruu” that's become representative of this region's cuisine.
