'Agedashi tofu' is made by draining tofu (by placing a weight on top) and dredging it in katakuriko before frying it up. Then, it's bathed in a dashi broth seasoned with soy sauce or mirin. It's often served with drinks as an appetizer at izakaya (Japanese gastropubs). Drain the water well to make sure you get the crispy finish. If you don't have time, wrap your tofu block in paper towels and microwave briefly for the same effect.
